Zucchini Casserole
6 large zucchini
2 c grated cheddar cheese
1 egg beaten
1 – 2 cups cracker crumbs
2 T butter or margarine
3 T cream or milk
salt & pepper to taste
garlic powder to taste
Cook zucchini in thick slices until tender. Drain well. Mash with a potato masher. Add crumbs, cream, butter, seasonings and egg. Mix well. Add 2/3 of grated cheese to mixture. Put remaining cheese on top.
Bake at 325 for 40 minutes.
